Under Federal law, wineries are subject to Food Safety Modernization Act (FSMA) requirements. This webinar will provide an overview of Current Good Manufacturing Practices (cGMP) and Sanitation Standard Operating Procedures (SSOP) that are expected under FDA’s regulatory jurisdiction and which are different than state requirements. Topics will inform attendees’

approaches for assessing their cleaning and sanitizing programs in order to realize where deficits exist and make corrective actions. The webinar will also explain what records need to be kept and how to train all winery workers as part of an annual requirement. Attendees will also gain insights on a major controllable cost driver in wineries, namely the additional costs incurred as a result of poor sanitation in the winery.

Content and instruction is presented by Dr. Thomas Henick-Kling, Professor of Enology, and Dr. Tom Collins, Assistant Professor, Viticulture & Enology Program, Washington State University.
